Chickpea Burger Patties
If you love a good burger (who doesn’t?) but also dabbling into plant-based eating, you have to try this recipe. Our Chickpea Patties are a veggie riff on burgers, with canned chickpeas stepping in for the traditional minced meat. Chickpeas are a wonderful source of prebiotics, which feed the beneficial bacteria in your gut. When well fed, these bacteria keep your immune system strong, improve your mood, reduce inflammation, regulate blood sugar levels… the list goes on. Here’s to making plant-based eating and gut health tasty!
Makes 6
Ingredients
1 to 2 tablespoons of extra virgin olive oil
1 white onion, chopped
2 garlic cloves, finely chopped
2 cans of chickpeas (liquid reserved)
1 zucchini, grated, squeezed of excess moisture
1 carrot, finely grated
1 bunch of coriander
1 ½ tablespoon of lemon juice
1 cup of dried breadcrumbs
Salt and pepper to taste
Method
Heat half the oil in a large frying pan over medium heat. Add the onion and garlic and cook for 6 to 7 minutes.
Drain the canned chickpeas and reserve the liquid.
Place the chickpeas, zucchini, carrot, coriander and lemon juice in a food processor. Process and slowly add 2 to 3 tablespoons of the canned chickpea liquid until it forms a rough dough.
Transfer to a bowl and stir in the breadcrumbs, onions and garlic.
Press into 6 patties. Refrigerate for 1 hour.
Heat the remaining oil over a medium heat. Add the patties and cook for 3 to 4 minutes on each side.
Serve in a wholemeal bun with your choice of salad
