Banana Flapjacks

They are a breeze to prepare in advance for a grab-and-go breakfast (or even snack). But most important? They’re full of fibre-rich oats, polyphenol-packed blueberries and banana plus tahini to bind, creating a truly gut-loving, mood-boosting, blood sugar-friendly and heart-healthy recipe. Now that’s a (scrumptious) mouthful.
Serves 8
Ingredients:
2 bananas
2 cups of rolled oats
2 cups blueberries
1 teaspoon of cinnamon
2 tablespoons of tahini
Method:
Preheat the oven to 180 C and line rectangular baking trays with baking paper.
Mash the bananas in a large bowl.
Add the oats, blueberries and cinnamon.
Stir through the tahini.
Pour the mixture into the lined baking tray and spread evenly with the back of a wooden spoon.
Bake for 20-25 minutes until golden on top then place on a cooling rack and allow to cool before cutting into squares.
