A Versatile Vegetable Soup (Winter Salad)

Our warming Vegetable Soup is the ultimate "Winter salad" that makes getting your daily dose of vegetables during the colder months a breeze. Packed with a comforting medley of vegetables, this soup is rich in immune-supporting vitamins, antioxidants and gut-friendly fibre. Easy freezer-friendly meal prep vegetable soup for gut health and inflammation in Winter

Serves 8

Ingredients:

  • 1 tablespoon extra virgin olive oil 

  • 1 brown onion, diced 

  • 2 garlic cloves, crushed 

  • 2 celery sticks, diced 

  • 2 carrot sticks, diced 

  • 2 zucchini, diced 

  • 400g tin diced tomatoes 

  • 2 tablespoon tomato paste 

  • 1L salt-reduced chicken or vegetable stock 

  • 4 cups baby spinach, silverbeet or kale (stalks removed and chopped)


Method:

  1. Heat 1 tablespoon of oil in a large saucepan. Add onion and garlic and stir until fragrant. 

  2. Add carrot, celery and zucchini, stirring until the vegetables soften. 

  3. Add the stock, canned tomatoes and tomato paste, and bring to a boil. 

  4. Reduce the heat to a simmer and cook for 20 minutes, stirring occasionally. 

  5. Add the spinach, silverbeet or kale, and continue cooking for a further 10 minutes. 

  6. Season to taste with salt and pepper to serve. 


Tips: 

  • Batch-cook this soup on the weekend and portion into individual containers that can be refrigerated or frozen for a ready-to-go “side salad” in work lunches or dinners

  • Enjoy a portion of the soup as a Winter mid-afternoon snack
