Gut-Healthy Prebiotic Rocky Road
Turns out, you can have your chocolate, eat it too… and support your gut health. With our prebiotic boosted rocky road recipe that is. Starting with heavenly dark chocolate, we’ve stirred in a bunch of prebiotic-rich foods - think pistachios, extra virgin olive oil and BARLEYmax flakes. These impressive flakes are crunchy, toasty and a 100% natural wholegrain with a unique blend of gut-friendly prebiotic fibres. Not to be confused with probiotics, prebiotics are the “food” for your good gut bacteria. When well-fed with prebiotics, your good gut bugs produce by-products linked with a whole host of health benefits. Think blood sugar regulation, improved immunity, reduced inflammation and skin health.
Makes 24
Ingredients:
½ cup BARLEYmax flakes (45g)
1 cup popcorn
250g dark chocolate
¾ cup pistachios (100g), chopped
½ cup walnuts (50g), chopped
2 tablespoons pepitas (30g)
1 cup dried apricots (130g), chopped
½ cup shredded coconut (30g)
1 tablespoon extra virgin olive oil
Method:
Break up the chocolate into a microwave-safe bowl and add oil. Microwave for 90 seconds and stir. Microwave in further 10 second intervals (if needed) until melted.
In a separate bowl, mix together remaining ingredients until well combined.
Cover ingredients with melted chocolate and stir until coated.
Pour mixture into a lined baking tray.
Place in the fridge until set.
Cut into preferred sized pieces and serve.
Tip: store in an airtight container in the fridge
