10 Minute Tuna Avo Sushi Bowl

If tuna avocado sushi is one of your staple food court choices, have a go at our easy deconstructed version. This recipe is complete in ten minutes, roughly the same time (if not, quicker) it takes to line up and order sushi at peak lunch hour. From a nutrient perspective, the best part of these bowls is the nori. Why? Nori is packed full of iodine which is essential for producing thyroid hormones that regulate growth, metabolism and how your body uses the protein, carbohydrates and fats you eat. Each serve of this recipe hits a third of your daily iodine needs. Not bad for ten minutes of your time!

Serves 1

Ingredients

  • 1 small can tuna in spring water, drained

  • 1 large cucumber

  • 1 microwave quick cup of long grain rice

  • 1 nori sheet

  • ¼ to ½ avocado

  • Sesame seeds, to garnish

  • Kewpie mayo, to garnish

Method

  1. Microwave the rice according to packet instructions.

  2. Dice the cucumber into 1cm cubes and slice the avocado.

  3. Assemble the sushi bowl by arranging the rice, tuna, cucumber and avocado in a bowl.

  4. Slice the nori sheet and nestle the pieces upright in the bowl.

  5. Garnish with sesame seeds and a good squeeze of kewpie mayo.
