Quick Veggie Pizzas
Feel like pizza? Look no further than these Quick Veggie Pizzas which give you more gut-loving fibre and slow-release carbohydrates but less saturated fat than your typical takeaway pizza. Get creative and add variety by switching up the veggies and aiming for a rainbow of colours. Each colour packs a different type of phytonutrient therefore health benefit!
Serves 1
Ingredients:
1 Wholemeal pita bread
2 tbsp tomato paste
8 cherry tomatoes, halved
5 kalamata olives, halved
⅛ red onion, very thinly sliced
½ zucchini, finely sliced
¼ cup lite tasty or mozzarella cheese
1-2 heaped handfuls baby spinach
Fresh basil leaves
Method:
Preheat oven to 180°C.
Spread tomato paste evenly over pita base.
Top with cherry tomato, kalamata olives, red onion and zucchini over the pizza.
Sprinkle cheese on top.
Top with baby spinach and fresh basil.
Bake until golden brown and enjoy!
