Carrot Cake Bites

Looking for an Easter treat the whole family will love? Try these carrot cake inspired bites which hit the sweet spot between enjoying food and nourishing your body this Easter. Carrots are rich in vitamin A, a fat-soluble nutrient important for eyesight, a strong immune system and healthy skin and bones. Our inclusion of extra virgin olive oil in place of butter gives these bites not only the perfect amount of moisture, but also a healthy dose of healthy fats to help your body absorb the vitamin A from the carrots. Makes 12

Ingredients:

  • 1 cup wholemeal self-raising flour

  • 1/4 cup rolled oats

  • 1 tsp bicarb soda

  • 1 tsp cinnamon

  • 2 eggs, lightly beaten

  • 180g apple purée

  • 1/3 cup olive oil

  • 2 medium carrots, grated


Method:

  1. Preheat the oven to 180ºC and grease a 12 cup muffin tin. Mix together the wholemeal flour, oats, bicarb soda and cinnamon.

  2. In a separate bowl, whisk together the eggs, apple purée and olive oil. Create a well in the centre of the dry ingredients and pour in the wet mixture. Stir to combine.

  3. Mix in the carrots and add teaspoons of hot water until you achieve a thick batter consistency.

  4. Spoon the batter into the muffin tin and bake for 10 to 15 minutes.

  5. Let cool after taking out of the oven before eating.
