EASTER RECIPE: HOT CROSS PROTEIN BALLS

Celebrating Easter with family, friends, chocolate eggs and hot cross buns is a reminder that food provides so much more than just nourishment - it should also be enjoyed!

HOT CROSS PROTEIN BALLS

Ingredients:

  • 1 cup dates 

  • ¼ cup almond meal 

  • ¼ cup vanilla protein powder

  • ½ cup walnuts

  • 2 tsp mixed spice

  • 1 tsp ground cinnamon

  • ½ an orange, juiced (add to correct texture)

  • 2 tbsp water (if needed)


    For the crosses (optional):

  • 100g cashews 

  • ¼ cup unsweetened milk of choice

  • 1 tablespoon maple syrup

    Alternatively you may wish to use melted white (or dark) chocolate

Method:

  1. Add all ingredients (except water) into a food processor and blitz until it forms a ball

  2. Roll into desired size and coat by rolling in additional almond meal (optional)

  3. Leave in the fridge to chill for at least 15 minutes 

    For the crosses

    1. Blend the cashews, milk and maple syrup, adding extra milk if required. Alternatively, melt the white or dark chocolate if using. Place mixture into a piping bag or a zip lock sandwich bag and cut a small corner off one side.

    2. Pipe the mixture into crosses on the balls and store in the fridge until ready to eat

Top Tip: If the mixture is too dry, add extra water. If the mixture is too wet, add extra almond meal.
