Balsamic Tomatoes on Ricotta Toast

Need a delicious gourmet breakfast option that you can cook at home in less than five minutes? This recipe is perfect for you. It may look too good to be healthy, but each serve of this recipe gets you 7g of gut-loving fibre and 200 mg of calcium for strong healthy bones.

Serves 1-2

Ingredients:

  • 1 tbsp extra virgin olive oil

  • 1 clove garlic, squashed with the back of a knife

  • 1 punnet cherry tomatoes

  • ⅛ cup balsamic vinegar

  • 1-2 slices whole grain bread

  • Ricotta, ½ cup per person

  • Fresh basil leaves, to serve (optional)

Method

  1. Heat extra virgin olive oil in a small fry pan at medium-high heat.

  2. Add garlic and cook for 30 seconds.

  3. Add cherry tomatoes and cook for 30 seconds.

  4. Add balsamic vinegar and cook for a few minutes, or until tomatoes soften and vinegar reduces down to a sticky sauce. Gently squash each tomato once with the back of a fork.

  5. While the tomatoes cook, toast your bread and top with ricotta.

  6. Spoon balsamic tomatoes over the ricotta toast.

  7. Sprinkle fresh basil on top if using.
